OLIVE OIL :
Our olive oil undergoes cold pressing. In 1997, our oil contained 0,3% acidity. The olives from our olive trees, 3km South of Roccastrada, are hand-picked and pressed in an old stone mill.

The Modenese company, Monari, vinegar producer since 1912, always puts effort into satisfying all of its customers' needs.
KARL BERNARDI “ PROSCIUTTO COTTO”:
This cooked ham has recently been awarded a prize for its excellent quality.
The salami from the Bindelli company has been awarded various prizes.
LUSETTI “CULATELLO DI ZIBELLO”:
This selected cut of ham made from loin of pork, is produced in limited quantities and is not easily available in groceries.
Exquisite Parma ham and San Daniele ham.
Small dairies from all over Italy supply our cheeses: quality mozzarella, fresh and seasoned goats cheese, sheep's milk cheese, Toma, Montasio and Puzzone.
Honey from horse chestnuts and “millefiori”, a liqueur obtained from wild flowers, undergoes cold centrifuge; our honey is always freshly supplied by our apiculturist in Roccastrada.
Our strawberry apricot, fig and cherry jams are prepared without artificial preservatives, like home-made ones, and with cane sugar.
For our tomato sauce we use tinned tomatoes from the Tudia company, in Sicily, that we believe to be, for the moment, superior to all other tinned tomatoes available on the market.
